Once upon a time, the rich in Amsterdam retreated to summer estates to escape the heat and the fetid canals. There are only three such estates left, and this one located in the manicured gardens of Frankendael Park, has been magnificently restored and is now home to a stellar slow-food. Using ingredients sourced from “within biking distance” and French-Italian technique, Merkelbach creates vibrant, seasonal dishes like duck breast with red cabbage, and pumpkin ravioli with roasted pistachio, as well as lighter dishes; the asparagus salad is incredibly fresh and delicious. Of course, the beautiful dining room and terrace don’t hurt. Be sure to leave a little time to explore.
